McCormick's, the main dining room in the beautiful Oxford Hotel, is reminiscent of an old fine-dining fish house, complete with a dark, woody décor and a wait staff dressed in traditional white jackets. The staff plays a prominent role with its knowledge of the daily changing menu, preparations of the fish and selections of wine. Chef Stephen Vice is remarkable with his presentations and flavors. Choose from a nice array of fresh oysters on the half shell or try mussels in curry sauce, seafood-stuffed mushrooms, and Brie and garlic for starters. Don't forget the terrific sourdough bread to sop up all of the sauces. The fish comes from around the world, ranging from exotic Hawaiian delicacies to freshwater trout. Sample African perch glazed with soy and ginger, sole with capers and lemons or salmon stuffed with shrimp, crab and Brie. Choices vary based on the day's freshest catch. Anything can be ordered grilled and spiced to your liking. Some special favorites are the Parmesan-crusted Dover sole, plank salmon and tuna. Meat lovers will enjoy the surf and turf and Colorado lamb chops. Desserts change frequently and are well worth the extra indulgence. Don't miss the berry cobbler à la mode, decadent chocolate cake or the best apple pie with the best caramel sauce. Enjoy the specials at happy hour when great food comes at very reasonable prices. The happy-hour specials pack in quite a crowd. At night, slip into the adjacent bar filled with locals. For another option, head to the intimate Cruise Room and enjoy a dry martini. McCormick's in LoDo remains the favorite even though there is now a second location with the name McCormick & Schmick's. The menus are similar but there is a difference in preparation and caring.
