The ubiquitous Cliff Young returns to Denver with his new C*Y Steak, a French inspired steakhouse in the Diamond Cabaret. With a private entry, the décor features natural color polished soapstone walls with accents of red and black throughout the chic room. Big booths, comfortable seating, and great posters, along with an outrageous red chandelier in the entry, add to the scene. The food combines classic steakhouse with a French accent. Start with oysters with sorbet or Rockefeller, shrimp or lobster cocktail, calamari, and crab cakes. Or opt for the combination seafood platter. The charcuterie of meats and housemade pates and beef carpaccio bring out the French influence. Warm rolls arrive with the course of onion soup, caprese done in a whole tomato, beet salad, or a delicious chopped salad. French onion soup is a must. Caesar salad, rack of lamb, and chateaubriand demonstrate Cliff’s flair with tableside presentations as he personally prepares these dishes showing off his style. Prime steaks of Delmonico, rib eye, filet, and lamb start the entrée choices. If you prefer seafood, enjoy lobster, salmon, and tuna, or the chicken dishes. All are served with marrow bone and choice of seven excellent sauces. Pick the one that complements your dish and taste. Forbidden black rice, bok choy, potatoes and onions in duck fat, bok choy, broccoli, and hush puppies make perfect sides for sharing. Decadent desserts are mandatory, as all are outrageous: chocolate mousse, crème brûlée, chocolate ganache cake, and fried cheesecake beignets. The excellent wine list and perfect service are very important to Cliff and his attention to both shows off his expertise. There are ladies on a runway in the room that remind you that it is part of the Diamond Cabaret. The restaurant is upscale and pricey, but every moment brings back the charm and details that Cliff Young has made his signature.
