It was only a matter of time before the Stapleton area would get its first Irish Pub. Casey's fills the bill with a well-stocked bar and a lunch and dinner menu that combines traditional Irish pub food with some bistro-type entrées. While the appetizer menu ranges from buffalo wings to pot-steamed mussels, the real treat and value comes in the burger and Irish specialty sections. Casey's half-pound burger comes perfectly grilled on a toasted Kaiser roll with lettuce, tomato and onion. Accompanied by wonderful seasoned chips with no extra grease to mar the taste, this dish draws raves from burger aficionados. The traditional salmon boxty, an Irish pancake stuffed with Atlantic salmon and roasted peppers in a sour-cream dill sauce and mashed potatoes, makes a terrific entrée. The bar menu has 17 traditional beers and a full complement of wines and hard spirits to add to the pleasure of the meal. Several choices for entrées include favorites such as fish and chips, chicken curry, grilled beef tenderloin, sandwiches and more. Casey's staff is friendly and the minimal décor pleasing. Casey's has a bright future as it can lay claim to "first on the block" at Stapleton. With a young crowd and a perfect place to hang out, Casey's is not likely to "strike out" should you step up to bat!
