Spectacular best describes the space at the new Fogo de Chao. The place is huge, seating 300 with a fabulous bar area when you enter. Enjoy drinks, conversation and gathering and then move into the dining room. Walls of wine, comfortable seating and an unbelievable salad bar are the focal points. The salad bar is a mass of color, the vegetables presented like works of art: heart of palm, artichoke bottoms, tomatoes, broccoli, asparagus, peppers, and more. Smoked salmon, salami, and cheeses of every ilk are other choices. Chicken or potato salad, beets, cucumbers, breads, and of course, real salad preparations fill the tables. Go back as often as you like. The servers dressed in gaucho pants then bring the entrees. All are served on skewers and 15 chefs each arrive with their specialty: filet, sirloin, garlic steak, prime rib, pork and beef ribs, lamb chops, chicken, pork breaded in parmesan, sausage, and more. Divine cheese rolls, polenta, mashed potatoes and plantains are served at the table throughout the meal. The servers shave off your choices until you are full. Each guest has a tab that is red on one side, green on the other. Until you show the red, goodies continue to arrive. You can go red—and then go back, so no worry. End with desserts of papaya mixed in ice cream drizzled with liqueur, crème brûlée, cheesecake, and a selection of chocolate favorites. The wine list is excellent, and service is perfect. The staff does not miss any detail of pleasing the diners. Even the valets do their part to make everyone welcome. You can dine by enjoying the entire experience, or just the salad bar if you prefer. Either way, Fogo de Chao is not an ordinary Brazilian Steakhouse but a step above in food, service, and a special treat.
